This Icelandic cake is my great-grandmother’s recipe, and a Christmas tradition in my family. The sweetness of the plum jam between thin layers of cake makes it tender and perfectly balanced. Topped with almond-flavoured buttercream — we eat it layer by layer, saving the top for last! Best served in small pieces, and keeps exceptionally well, tightly wrapped, in the fridge or freezer.
